Dinner Adventures: Chicken Quesadillas

What you'll need:

-boneless skinless chicken
-McCormick Chicken Taco Seasoning Mix
-Tortilla Shells
-Salsa con Queso
-Shredded Mexican Cheese
-----------------------

How to make:
1. Preheat oven to 325 degrees.
2. Heat 1 tbsp oil in large skillet on Medium heat. Add Chicken. Cook until no longer pink in the middle.
3. Shred cooked chicken. I'm using two forks, holding the chicken with one fork and scraping it apart with the other.
4. Add seasoning mix and 1/2 a cup of water to the chicken and bring to a boil. Reduce heat and simmer 5 to 7 minutes.
5. Place Taco shells in aluminum foil. Put them in the oven on a flat baking pan for 7 minutes.
6. Pull the taco shells out of the oven and place stack on a large plate.
7. Preheat the oven to 350 degrees.
8. Spread a spoonful of the Salsa con queso around the shell.
9. Scoop some of your shredded chicken on half of the shell.
10. Cover in layer of shredded Mexican cheese.

11. Fold in half and place on baking pan. Continue until you've used up all your mix.
12. Bake in oven on 350 for 10 minutes.

Now wait for your delicious meal to be done!

DINNERS DONE!

Pull your quesadillas out of the oven and let cool for a few minutes. Serve them whole or cut into a few triangles. We had Lipton Spanish Rice with ours. You can do whatever side you'd like or no side at all. Either way you'll enjoy these quesadillas!
